For the Waffle Batter:
1 cup Barlow's 3in1 Pancake Biscuit Waffle Mix
1 egg or substitute
1 cup milk or substitute
1/4 butter
1 teaspoon vanilla extract
2 tsp cinnamon
For the Cinnamon Apple Topping:
2 apples, peeled, cored, and diced
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons unsalted butter
1/4 cup chopped walnuts (optional)
Instructions:
For the Cinnamon Apple Topping:
Start by preparing the delicious cinnamon apple topping. In a skillet, melt 2 tablespoons of unsalted butter over medium heat.
Add the diced apples to the skillet and sauté for 3-4 minutes until they begin to soften.
Sprinkle brown sugar and ground cinnamon over the apples. Stir well to coat the apples evenly.
Continue to cook for another 5-7 minutes, or until the apples are tender, and the mixture has thickened. If you like a little crunch, add chopped walnuts during the last 2 minutes of cooking. Set the topping aside.
For the Waffle Batter:
In a large mixing bowl, mix together Barlow's 3in1 mix with 2 teaspoons of ground cinnamon.
In a separate bowl, beat the egg and then add the milk, melted butter, and vanilla extract. Mix thoroughly.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are perfectly fine.
Preheat your waffle iron and lightly grease. Pour waffle batter onto the hot waffle iron and cook until golden brown.
Remove from the waffle iron and top with apple topping! Enjoy!
