Barlow's Homestyle Fried Chicken

Ingredients

*Chicken

3–4 lbs bone-in chicken pieces (drumsticks, thighs, wings, breasts)

2 cups buttermilk

1 tsp salt

1 tsp black pepper

1 tsp paprika

½ tsp garlic powder

½ tsp onion powder

*Coating

cups Barlow’s Pancake Mix

1 tsp paprika

1 tsp seasoned salt

½ tsp cayenne pepper (optional)

½ tsp black pepper

*For Frying

Vegetable, peanut, or canola oil

Cooking instructions

1. Marinate the chicken: In a large bowl, mix buttermilk, salt, pepper, paprika, garlic powder, and onion powder. Add chicken, cover, and refrigerate for at least 2 hours or overnight for best flavor.

2. In a heavy skillet or cast-iron pan, heat oil to 350°F (oil should be about 1½ inches deep).

3.. In a shallow dish, combine Barlow’s Pancake Mix, paprika, seasoned salt, cayenne (if using), and black pepper.

4. Remove chicken from buttermilk, letting excess drip off. Coat thoroughly in the pancake mix mixture, pressing to adhere.

5. Fry in batches for 12–15 minutes, turning occasionally, until golden brown and internal temperature reaches 165°F.

6. Drain and rest: Remove chicken from oil place on a wire rack. Let rest 5 minutes before serving.
